Cupcake of the Month: Red Velvet With Cream Cheese Frosting & Blueberries

When I think of July, I think of red white and blue, american flags, and all that jazz. So red velvet just seemed like the way to go for this month’s cupcake of the month. To keep it classy, I added a couple of blueberries to the top of the cupcakes. You’ll get the red white & blue effect while still maintaining a beautiful and classy presentation. I think Martha Stewart would be proud!

I got the recipe for the cupcakes and frosting here, and followed it to a tee this time. I love the look of piped frosting, but when I actually eat one of those beautifully decorated cupcakes, I always feel like it’s too much icing. So you’ll find my cupcakes aren’t stacked with beautifully piped swirls, but done the old fashioned way with a spatula (or in this case a butter knife). These came out great, and it was all I could do to give them away to friends so they didn’t end up a midnight snack and a few extra pounds.

A baking tip I’m slowly learning the hard way is to eat dinner before you do your baking! I was so hungry when these were finished I ate two in a row! I hope you enjoy them as much as I did!
