Rarely do I measure anything when I cook. I tend to just throw things together until it “feels” right. But lately I’ve been making an effort to measure out my meals so that I can share the recipes with you! Last week I made my meatloaf, served with rosemary potatoes. An easy, healthy meal that takes about 40 minutes! I cook the meatloaves in muffin pans so the portions are measured out.
Ingredients:
1 egg lightly beated
1/4 Cup plain oats
1/4 cup ketchup 3 tbs milk
1 small shallot
1 1/2 tsp Worcestershire sauce
salt & pepper to taste
1 Tbs. minced garlic (I used the kind in a jar)
8 oz. lean ground beef
8 oz ground pork
8 oz lean ground turkey
Directions:
Preheat oven to 375 degrees F. Grease muffin pan with cooking spray or oil. Mix all ingredients except ketchup and Worcestershire sauce in a large bowl. Form into balls and place in muffin pan. In a separate bowl, combine Worcestershire sauce and ketcup, and top meatloaves with mixture. Bake for 30 minutes or until internal temperature reaches 160 degrees F. Enjoy!
